Mix the chicken with the salt and pepper.

Use a large pot to heat the olive oil at medium-high temperature.

Add the chicken thighs, skin side down, and cook until browned, about 5 minutes per side.

Then change the side of the chicken.

In the same pot, add the chopped onion and red bell pepper. Cook until softened, about 5 minutes.
