  • 4 boneless, skinless chicken breasts
  • 2 large poblano peppers
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh cilantro (optional)

INGREDIENTS NOTES

  1. To get the smoky flavour it is good to roast the peppers.

  2. Add some cream to get rich creamy texture to the sauce.

  3. For creamy and melted topping better is to use shredded cheese on it.

STEP-BY-STEP INSTRUCTIONS

  1. For charred skin roast the poblano peppers over an open flame, and steam them in the plastic bag for 10 to 12 minutes, then remove the charred skin, also seeds then chop it.

  2. For 35 minutes cook the chopped onion and garlic in the heated olive oil that is in the pan or in skillet.

  3. Now add the chicken breasts in the pan or skillet for cooking for 1 hour from each side until it goes golden brown and cooked properly. Then remove the pan or skillet and set aside.

  4. In the same pan add some chicken seasoned water and every bit of browned by scraping it from bottom of the pan. Then stir in the heavy cream to get tenderness.

  5. Add the chopped poblano peppers in the sauce and then cook upto 5 to 10 minutes until sauce get thick and creamy.

  6. Again add chicken to the skillet or pan and add sauce over the top. And sprinkle with shredded cheese and cook for 2 to 3 minutes to get melted cheese topping.

  7. Sprinkle the fresh garnish over the food prepared in the pan.

  1. To get extra ordinary flavour and taste, marinate the chicken in lemon juice and spices for 1hour before the cooking, it will help to go taste inside the pieces. It’s best to make the straight cuts over the pieces.
