Red Pepper Romesco Chicken
INGREDIENTS NOTES
-
Red Bell Peppers: They really start to develop some of their sweetness, some of their smokiness when you roast them.
-
Almonds: These become much nuttier when toasted. It is just a perfect pairing with romesco sauce.
-
Paprika: I love using smoked paprika in this recipe; it gives really nice depth.
-
Olive Oil: Use an extra virgin for the grassy and fruity taste.
STEP-BY-STEP INSTRUCTIONS
-
Massage the red peppers with a bit of olive oil and roast them in the oven at 200°C for about 20 minutes, until the skin is charred. Allow to cool down, peel, and seed.
-
Place the red peppers, almonds, garlic, tomato, smoked paprika, and red wine vinegar in a food processor. Pulse until smooth.
-
Gradually combine the olive oil in the sauce and mix until creamy. Season with salt and pepper.
-
Season the chicken breast with salt and pepper, then place it in a medium skillet to cook. Let them cook on each side for 6–7 minutes until they are cooked through.
-
Place the romesco sauce above the chicken, and with a lid, let it simmer on low heat and let it cook for 23 minutes and the flavors to combine with the chicken.
