  • 2 Boneless, Skinless Chicken Breast
  • 2 tbsp olive oil
  • 1 tsp smoked pepper
  • 1 tbsp garlic powder
  • 1 tbsp salt
  • 1/2 teaspoon Black Pepper
  • 6 large, ripe Tomatoes, diced
  • 2 tablespoons Tomato Paste
  • 1 large Onion, chopped
  • 4 Garlic Cloves, minced
  • 1 large Carrot, diced
  • 2 stalks Celery, chopped
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream
  • 1/4 cup Fresh Basil, chopped
  • 1 Bay Leaf
  • 1/2 cup shredded Smoked Gouda Cheese, optional

INGREDIENTS NOTES

  1. If you really like the smoky taste of the smoked chicken breast, be sure to be your own chef or at least drop a drop or two of the liquid smoke.

  2. Use fresh tomatoes if at all possible. If not- excellent canned tomatoes work just fine.

  3. Excellent dairy-free replacement is coconut milk.

  4. Smoked Gouda Cheese: Another one is optional, but personally, I think it makes the finished product so pretty and adds this wonderfully rich, smoky flavor melded into the soup.

STEP-BY-STEP INSTRUCTIONS

  1. Rub the chicken breasts with some olive oil, smoked paprika, garlic powder, salt, and pepper.

  2. Grill or pan-sear the chicken until well-done, shred, and reserve.

  3. Add 1 tablespoon of olive to a large pot over medium heat.

  4. Add onion, carrot and celery. Sweat veggies until tender and soft, takes up to 5-7 minutes.

  5. Add garlic and cook for 1-2 minutes until fragrant.

  6. Add in diced tomatoes, tomato paste and bay leaf.

  7. Allow to cook for 10 minutes or until tomatoes have softened and release juices.

  8. Bring the chicken broth to a boil, add to tomatoes, then lower the heat to simmer.

  9. Simmer for 30 minutes, stirring periodically.

  10. Remove Bay Leaf and puree the soup with an immersion blender until smooth

  11. If you like a little texture, only blend half the soup.

  12. Add the shredded cooked chicken and the heavy cream.

  13. Bring the soup to another boil, then reduce heat and simmer for 5 minutes to heat through.

  14. Top with smoked Gouda to melt and combine with the rest of the soup.

  15. Correct the seasoning of the soup with salt and pepper.

  16. Toss with fresh basil before serving.

  1. Add a pinch of red pepper flakes.

  2. Eliminate the chicken and chicken broth and substitute the broth with vegetable broth for a good smoky tomato soup.

  3. Increase the heavy cream for added richness.

  4. Most often, smoked chicken is used for this extra-smoky flavor, or you can just up the liquid smoke a tad while the soup cooks.

  5. A few crispy croutons, a swirl of olive oil, a sprinkle of Parmesan cheese on top of the soup.
