  • 4 chicken thighs (bone in, skin on)
  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  •  1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley

  1. You can use boneless chicken in this recipe but prefer is to use bone in and thigh pieces that makes recipe juicy and tendered.

  2. You can use brown rice but the preference is to use long grain rice that looks very beautiful in the pot and taste very delicious to eat.

  3. If you want to use vegetables feel free to use with combination of chicken it makes more delicious doze for eaters.

STEP-BY-STEP INSTRUCTIONS

  1. Prepare the chicken by making the marinade of thighs with salt, pepper, and paprika. Now heat the olive oil or canola oil in the large pot over medium-high flame. Now add the chicken to the pot and cook until browned on both sides. Now remove the chicken and keep it aside.

  2. If you want to add vegetables then cook the vegetables in the same pot by adding chopped onion, garlic, and carrot and cook until vegetables are fragrant. Otherwise, you can skip this step.

  3. Now add rice and then pour the water of chicken and vegetables into the pot and then wait until the mixture comes to a boil.

  4. Now add the thighs to the pot, and place them on the top of the rice. After this reduce the flame to low add some weight to the pot cover and wait for 20 to 25 minutes, until the rice cooks properly and tender.

  5. Once this dish is cooked properly before you dish out it take a rest and set it to normal temperature and then serve it with salad and raita.

  1. To make it more spicy add a pinch of red pepper flakes or any other chili on it for a spicy touch.

  2. Garnish fresh parsley over the rice to enhance its flavor.

  3. Sprinkle the mint leaves over the rice that make the spices cool.
